After you have had time to get to know (and take selfies) with our guest of honor -the tuna- Chef Ryan Smith will slice up and serve the 100 LB plus Bigeye tuna and serve it to the crowd over the course of the evening in a range of modern and traditional styles.

About the fish

This beautiful fish is hand-picked from the Hawaiian fish auction just for this event! It is shipped overnight, landing in JFK before hopping a taxi directly to 50 West Street.

Holding a six-year stint as the Executive Chef and Head Wine Educator of New York Vintners, one of New York's most popular food and wine destinations, Chef Ryan has just come back from a 16-month residency in London.
