Classic California Cabernets: A 10th anniversary Celebration !!!!

Join us as we taste through the sexiness of one of Napas most balanced vintages

Join Chef Ryan Smith of Fork and Saber as he teams up with wine expert and founder of executive wine seminars Bob Millman. Bob has amassed a wealth of knowledge after decades spent in the wine industry. We are excited to join him in a passionate discussion as we taste our way through this sexy vintage of Cab!

"The 2009 Napa Valley Cabernets, beautifully balanced wines from a mild growing season without weather extremes, are aging slowly and gracefully, with the better examples still short of their peaks, proving once again how well the best Napa Valley Cabernets can develop with time in bottle." Steve Tanzer, Vinous Media

Recently, Vinous Media published Steve Tanzer’s detailed analysis of the 2009 California Cabernet. He liked what he tasted pretty much across the board.

We thought that this would be an ideal time to feature 8 Classic Cabernets, each highly rated by Tanzer. First let’s define a Classic California Cabernets: They must come from a first class winery that has been making Cabernets for 25 vintages or more. This means that their style and goals were established before the Cult Cabs started to come into prominence on the 1990s. Several including Dunn, Montelena and Ridge take us back to the 60 and 70s, almost the dawn of high-end California wines. Below are the eight wines with Tanzer’s scores, Tanzer is in our opinion the best, most reliable and honest of the wine reviewers in the last 30 years. A conservative scorer, a 94 from Tanzer is equivalent to a 97 or more from Parker and Suckling. Below the 8 wines we will tasted are listed alphabetically with Tanzer’s score in parenthesis.

1. Dominus (94)

2. Dunn Howell Mountain (94)

3. Chateau Montelena (94)

4. Pride Spring Mountain Reserve (94)

5. Phelps Insignia (94)

6. Ridge Montebello (92+)

7. Spottswoode (4)

8. Verite La Jolie (95+)

Savor Salon Series: Test Kitchen 2 $95

As many of you know, world renowned concert pianist Elaine Kwon and I team up quite often to do a series of events that engage all of your senses. A few times a year we invite people to Elaine’s home on the Upper West Side to gather around her 1860s Steinway piano and test the ideas we have been working on. It's amazing to see a concert pianist you usually have to watch from across Carnegie Hall perform from a few feet away. Of course, I will be preparing a full dinner with wine pairings to complement the music. This is a truly special event not to be missed!

Focus On Bordeaux ($200)

Join Fork and Saber as we team up with wine expert and founder of Executive Wine Seminars Bob Millman for an in-depth tasting through Bordeaux wines. Bob has amassed a wealth of knowledge after decades spent in the wine industry. We are excited to join him for a passionate discussion on the most exciting wines to come out of this region.

From a geographical perspective, we can look at Bordeaux as being divided by the Gironde river which runs from the Atlantic ocean all the way down past the city of Bordeaux to the wines from the left bank of the Gironde and the wines made on the right bank. The left bank includes the outstanding villages, north to south, of St. Estephe, Pauillac, St. Julien and Margaux. Many if not most of the world’s best Cabernet Sauvignon-based wines are made in these 4 villages. We will taste 8 highly classified wines from these pre-eminent villages including Chateau Montrose from St. Estephe, Chateaux Pichon Baron Pontet Canet from Pauillac, Chateaux Ducru Beaucaillou and Leoville Poyferre from St. Julien Chateau Rauzan Segla and D’issan from Margaux. The tasting will include Chateau Mouton Rothschild, one of the 3 Premier Grand Crus from Pauillac and by consensus, the wine with the sexiest bouquet made in Bordeaux. Will you be able to pick it out in this blind tasting? There is only one way to do so: join us for a thrilling evening of top Bordeaux.

Focus on Piemonte: Barolo Tasting ($225)

Join Fork and Saber as we team up with wine expert and founder of Executive Wine Seminars Bob Millman for a blue chip Barolo tasting. Bob has amassed a wealth of knowledge after decades spent in the wine industry. We are excited to join him for a passionate discussion on the most exciting wines to come out of this region.

Piemonte is Italy’s finest wine producing region—with all due allowance to Brunello in Tuscany. By universal agreement, the best wines made in Piemonte are Barolos. Made entirely from the Nebbiolo grape, top Barolos scale the heights of noble elegance and aromatic complexity. In recent vintages, Barolos have become accessible within a few years of bottling—unlike the past when they took decades to soften up. Warmer temperatures and more selective picking of the grapes has produced richer, rounder wines than in the past. But they remain formidable wines nonetheless. Once you get used to the texture and acidity of a good Barolo you will understand why they offer something that no other red wines made on planet Earth can provide.

We explore the fascinating wines of Barolo by tasting wines—covering a decade, from such famous producers as Giacosa, Parusso, Rinaldi, Conterno, Clerico, etc. The tasting will include one of the most iconic wines made in Piemonte—The Barbaresco from Angelo Gaja. Barbaresco is the neighboring village to Barolo. Will we notice the difference? You will have to join us to find out!

Springtime in Italy Wine Tasting ($75)

I love Italian wine. Italy is one of the world's most diverse wine producing countries, with over 1,400 native grape varietals, twenty wine growing regions and a 2,000-year-old winemaking history. Even with all of this diversity, most people have one or two go to grapes or regions they stick with and are not super confident expanding beyond that. In this 2.5 hour class we will explore 8 wines (alongside snacks) from lesser known regions and varietals that are perfect for spring. Learn how geography, climate, and production methods all come together in perfect harmony. We will have you confidently reaching for the wine list the next time you’re at your favorite Italian restaurant.

This class will take place in the new Korin test kitchen.

There are some stellar wines coming out of Australia right now. Old World v. New World: A Case for Terroir - Pinot Noir $150

Join Fork and Saber as we team up with wine expert and founder of executive wine seminars Bob Millman. Bob has amassed a wealth of knowledge after decades spent in the wine industry. We are excited to join him in a passionate discussion and really dig deep into how terroir affects this grape.

There can be no question that Pinot Noir has moved into 1st place in terms of popularity among red wine drinkers. The reasons are not hard to find: lovely, fragrant berry bouquet, soft tannins and plate refreshing acidity mark many well-made Pinot Noirs. Burgundy is the home to Pinot Noir. Cistercian Monks planted the grape throughout the region more than a thousand years ago! In the new world, Oregon has proved exceptionally hospitable to Pinot Noir. From the 1st winery in 1966, there are now more than 400 Oregon wineries making Pinot Noir. A great American growth story!

In this tasting, you will experience 8 world class wines 4 Burgundies and 4 American. Pinot is a tricky grape to get right. It takes a lot of work and skill to produce wines which capture the inherent qualities of the grapes. When it goes right, Pinots give immense vinous pleasure.
